Tabbouleh

A really fresh Lebanese salad that goes well with grilled meat. Serves 4-5.

Ingredients
A big bunch of parsley, about 200 g, chopped
A small cucumber, chopped in small pieces
3-4 spring onions, finely chopped
a handful of ripe cherry tomatoes, chopped
About 100 g cooked couscous or bulgur
1 green or yellow sweet pepper

1 lemon
5 tbsp olive oil
S&P

Method
Mix the parsley, cucumber, onions, tomatoes, bulgur/couscous and the sweet pepper in a big bowl.

Then, make the vinaigrette sauce - Squeeze out the lemon juice from the lemon, and mix with olive oil. Season. Pour the vinaigrette over the salad and mix once again.

Serve with grilled meat and a thin flat unleavened bread. Enjoy!
