400g tagliatelle ( i prefer homemade tagliatelle)
a good handful of different mushrooms, sliced
red,yellow and green pepper, sliced
2 tomatoes riped
1 chili finely chopped
oregano and thyme
1 tsp balsamico vinegar
3 cloves of garlic, sliced
salt and pepper
extravirgin olive oil
Let to boiled pasta in hot water with sea salt, al dente.
Heat a large pan with olive oil, and add mushrooms and cook a few minutes, then add garlic, chili and fresh thyme. Sliced peppers, zucchini and add to the pan. Season with salt and pepper Continuous to cook and add more olive oil is it necessary.
Separated peel and core of tomatoes, sliced peeled and add to the pan and mix all together.Add tomatoes core too and some cooking water. End with 1 tsp of balsamico vinegar.
Serve with parmesan cheese, fresh oregano and sprinkle with extravirgin oliva oil.
