this is my favourite dish for shrimps and is very good for sea food too...
200 g homemade tagliatelle
100 g cream
1 small zucchini, peeled and sliced
1 glass white wine
a pinch of saffron
1 chili, finely chopped
3 cloves of garlic, finely sliced
sea salt and pepper
extravirgin olive oil
Boiled tagliatelle in hot water with sea salt, al dente.
Add a pinch of saffron in glass of white wine and mix.
Heat a pan with olive oil, add garlic and chili. Cook gently until is soft then add shrimps and zucchini. Cook for 1-2 minutesl, then add white wine. Still on heat until the alcohol is evaporated then add cream. Season with sea salt, pepper and oregano.
After a few minutes add paste and mix.
Serve with fresh oregano, parmesan cheese and sprinkle extravirgin olive oil.
