traditional side dish very famous in Greece and Cyprus island
Ingredients
4 serves
100 grms tahini (mashed sesame seeds)
2 cloves of garlic
juice of 1 lemon
1/2 tea sp salt
1 table sp olive oil
water
Method
In a multi chopper add the tahini ,the garlic and the oil. Press the button of the chopper and mix / chop the garlic with the tahini. This will create a mass like \"gum\". Add while by while the lemon juice and keep mixing using the chopper. The \"gum\" will now harden. To soften the mass you must add while by while, water. Dont stop mixing. Adding water will soften the salad, and in this way you can make it as soft/flux as you like it .
When you make it as flux as you like put it in a bowl and serve it with a lemon slice....

Actually this salad is more famous in Middle Eastern ( Arab ) countries. I recently had lot of it in Egypt in a number of variations. Seasoned with cumin or corriander, or even hot paprika and without garlic. My suggestion is to use a mild flavor olive oil, so that it will not cover the distinct taste of sesami.
