Ingredients
Chicken breast
Pesto
Feta (cheese)
Sun dried tomatoes
Olive oil
Salt and pepper
Method
First put the sun dried tomatoes into a bowl of water!
Then take the chicken breast and put it between two lairs of plastic or into a plastic bag. Use your hand to hit it flat, 1 cm thick. Let it stay inside the plastic while you make a fresh little salad.
Pre heat the oven to about 150 C.
The filling is easy, just butter one side of the smashed chicken with pesto, then cut the sun dried tomatoes into small pieces and lay them on top of the pesto and finish the filling with a little lair of feat cheese.
Then the smart part: Use the plastic to help roll the chicken (its smart not to have filled the chicken to much). Let the chicken lie a little inside the plastic bag rolled up like a little cake.
Have a little olive oil in a bowl big enough for the rolls of chicken. Add a little salt and pepper before putting the chicken into the bowl. Now you can easily put the chicken into the bowl by just rolling them out of the plastic. It's fantastic!
A little salt and pepper on the top of the chicken. Let it stay in the oven for about 20 minutes. Finished. Serve it with a salad of free choice and some new baked bread. The recipe for the bread I will publish later. Just have to test it first!
