A very common side dish from the island of Crete(south Greece)
Ingredients
4 barleycorn cookies(in Greece we call them dacos)
2 tomatos
100 grms goat cheese
2 spoons extra virgin olive oil
3 olives(into pieces)
oregano
basil leaves for decoration
just a snap of sugar
Method
Just pass for 2 seconds the cookies under a flown water. This will make them smooth.
Mash the 2 tomatos into a blender and drain them to remove the liquid part of tomatos.
Mix tomatos with oregano,sugar and olive oil. Place this mixture on the \" dacos\" and then add goat cheese and olives.
Drink a dry aperitif and eat them as a starter.
