The simplest onion soup

Ingredients
1oz (25g) butter
1lb (500g) onions (sliced)
4 cloves garlic (sliced or grated)
1.75 pints (1litre) vegetable stock

Method
1 - Melt the butter in a large pan
2 - Reduce the heat and add the onions. Cover and leave on a low heat to sweat for about 15 minutes until they turn the colour of golden syrup
3 - Add the garlic and stir in well
4 - Add the stock, cover and simmer for about 30 mins

Serve with whatever you like with your soup

NB. Do take care not to eat this if you're going to be in polite company within 24 hours. Nothing to do with the onions and garlic. It can just be a bit on the "explosive" side ;)

I have tried this one, but added some thyme and bayleaves. It is a standing order in our family now, my kids just love it!
