Russians think blini is their expertise. Yet an estonian girls somehow always ends up making her russian flatmates blini dough into the right consitency with the help of some fats which they are terrified of, and some starchy flour. dont worry, we won´t use MORE fat, just a non-stick pan.
Ingredients
3 eggs
1 1/3 cup of rough, multigrain flour
1/2 cup of corn or potato flour
1/4 tsp salt
2/3 cup of milk
25 g melted butter or 1 1/2 tbsp vegetable oil
250 g curd
150 g canned fruit salad
3 tbsp very sweet berry jam
Method
beat the eggs slightly, add salt. mix in the multigrain flour, if the consistency gets too thick for stirring add milk. add enough milk to get a light dough. sift in the corn /potato flour. Finally add some oil or melted butter, it will make large pancakes very elastic so they wont break apart.
let the dough stand for about 15 minutes, then take a non-stick pan and make large over-the-pan cakes, which you pile up on a plate and let cool.
mix fruit salad and curd, then use a cake spade to spread the \\\"grout on a pancake and top with another one, spread some jam on that. repeat till you have used all the cakes and make the \\\"wall\\\" as high as possible.
if you really want to be extravagant, put some \\\"snow\\\" on the roof made of whipped cream. there are pigeons sitting in the snow - frozen berries.
keep in the fridge before serving. eat with a helmet on.
