Toad in the hole

A recipe for comfort food on a rainy day! best served with gravy and green veggies

Ingredients
8 x Pork and beef sausages
Dried mixed herbs
2 x Eggs
1 Cup of plain white flour
Half a pint of milk
Salt
Pepper

Method
1 - shallow fry your sausages (no need to add oil as they will cook in there own fat)

2 - while the sausages are cooking take a mixing bowel and pour in your flour.

3 - make a well in the middle and break your eggs in to the well.

4 - wisk away while adding your milk bit by bit until you have a smooth / slightly thick consistency.

5- add salt/ pepper and mixed herbs to the mixture.

6- place your sausages in a ovenproof dish and cover evenly with your batter mixture.

7 - cook in oven for approx 30 mins or untill batter has risen and golden brown

8 - serve with green veggies , gravy and a good film :-)

What about the oven temperature? the fat has to be very, very hot (sizzling) to cook the ' toad ' otherwise you will finish with a defalted yorkshire pudding!!! advice from a yorkshire woman... I cannot imagine how yours turned out?
