Tomato and Goat's Cheese Tart (Serves 6)

Ingredients
375g pack ready-rolled puff
pastry
200g goat's cheese
5 ripe tomatoes
2 tsp thyme
2 tbsp balsamic vinegar
salt and black pepper

Method
1. Preheat the oven to 190C. Lay the puff pastry out onto a baking sheet. Score a border about 1 cm inside the edge of the puff pastry.
2. In a bowl, mix together the goat's cheese and 1 tsp thyme. Carefully spread this
mixture over the puff pastry, up to the border edges.
3. Thinly slice the tomatoes. Pour the balsamic vinegar into a small bowl, Dip the
tomato slices into the vinegar and arrange in slightly overlapping layers. Sprinkle over salt, pepper and the remaining 1 tsp thyme. Bake in the oven for 35-40 minutes. Leave to rest for 5-10 minutes before serving warm, or serve cold.

I've never made a tart before nor used puff pastry but this was so easy. I didn't use the balsamic vinegar but the result was still absolutely delicious

Superb recipe. Simple to use. Can be prepaired and ready to cook leaving you time to have a drink with your friends.
