Tomatoe Omelet with infused Basil Oil

Getting the Basil flavour in your omelet is easy when using this great oil that is infused with basil. The mozzarella melts lovely in the omelet and gives it another great texture. This is great for breakfast or brunch
1 tomatoe sliced thinly
6 eggs, free range
1 tbsp Basil infused oil
heat your pan and add the oilive oil. Once oil is hot, place your slices of tomatoes on the pan to start giving them color.
Beat all 6 eggs and pour on top of tomatoes in pan. As everything starts to cook drizzle our Basil infused oil for added flavour. Add your mozzarella near the end, just before you are ready to remove form pan.
