Ingredients
5 ripe tomatos
1 red or yellow pepper
2 carrotts
1 onion
herbs to taste
2 tbsp olive oil
water
Method
blanche tomatos in boiling water, cool under the tap, and peel.
chop all other ingredients
heat the olive oil in a large sauce pan
stir fry all the veggies except the tomatoes for a couple of minutes until coated with olive oil but not browning
add the tomatos and the herbs ( finely chop is using fresh)
add 1 cup of water
bring to boil
let simmer for 20 minutes
use hand blender until smooth
simmer for another 5 minutes
either freeze in portion sizes or fill into sterilized jars.
