Transylvanian stuffed peppers

Although the name is not suggesting this, stuffed peppers is actually a soup, which is so commonly made in Transylvania that you must have at least once a week. Or twice if you really like it.

Ingredients
4-5 small (california) peppers
250 gr• minced pork
100 gr• rice
0.5 l tomato juice
green parsley (fresh)
salt, pepper, oil, flour

Method
The preparation is very simple, so let’s start with the small peppers (color does not matter, pick the one you really like) and the 250 grams of minced pork meat. Mix the pork meat with 100 grams of rice, some salt, some pepper and some water till it becomes soft enough. Now clean the peppers and stuff the meat/rice mixture into it. Don’t over stuff, as it will grow during cooking and might break the pepper.
Put to boil circa 2 liters of water, and put the stuffed peppers in it, and also add a bunch of green parsley. Now cook it for 40 – 50 minutes till the peppers and the meat inside are cooked, meanwhile prepare some roux (put a spoon of oil and mix well with 1 spoon of flour till golden brown).
When the peppers are cooked mix the (already) cold roux with a few spoons of hot water from the soup, and add it to the soup. After this add 0.5 liters of Tomato juice and let it cook for another 30 minutes.

Like Sykvia said is a Romanian recipe and particularly this one is a soup, judging after the quantity of sauce served. The main course stuffed peppers usually has less sauce.<br /> The traditional receipe contains also choped onion (previously fried or just raw), raw eggs and some parsley / dill. <br /> All in all you can find better recipes for Romanian stuffed peppers.

This is a Romanian recipe, Transylvania is just a part of Romania, where, by the way, everyone makes this food, as a soup or as a main course.
As a suggestion, serve it how with sour-cream (even if I prefer yogurt) on top. If you like, take along a hot pepper as well.
