Ingredients
Chicken thigh (skinless)
Black bean & garlic sauce
Herbs of Provence
Shallots
Veg broth
1 red chilli (optional)
salt to taste
Method
Chicken thigh in bowl
2 heaping tbs. black bean & garlic sause (assian market)
2 tbs herbs of Provence
coat all the chicken with above combiation
Let sit in refrig for 2 hrs
Cut shallots in 1/2 lengthwise, then slice fine
Heat pan with sunflower oil
add thicken to hot pan, turn (max) 2 min.
add shallots & chilli (optional)
add enough broth to 1/2 cover chicken
Turn down heat and cover, cook 15 mins
after 15 mins remove cover, continue 5/ mins more
let liquid reduce ro a nice gravey
we like it with rice and a salad
