Tzatziki

Tzatziki

Ingredients
500g turkish yoghurt (or use a thick greek yoghurt)
1/2 organic cucumber, roughly grated
3 cloves of garlic, chopped
A dash of a lightly flavoured oil
Some salt and pepper

Method

Before you start, place the grated cucumber between a few paper kitchen towels and squeeze gently to get rid of some of the water.

1. Place the garlic slices on a small, flat plate. Sprinkle with a little salt and a little dash of oil.
2. Using the back of a fork, crush the garlic till you have a smooth paste. Place in a serving bowl.
3. Add the cucumber and yoghurt to the garlic paste and mix well. Taste for seasoning adding a little extra salt and some pepper.
4. Cover tightly and allow to marinade in the fridge for at least 2-3 hours.

. Delicous served with marinated/grilled pork dishes, olives, chillies in brine and some turkish bread.

In order to make great tzatziki you definately need to put in some fine choped dill (anethum)... Tip from a greek guy. Enjoy!
