  • Recipe adapted from Jo Stepaniaks' Colby Cheez (The Ultimate Uncheese Cookbook)
  • 1 cup of unsalted cashew nuts
  • approx. 1/4 cup of jarred, red bell peppers
  • 1 mild red chilli, chopped
  • 1.5 cups of water
  • 4 heaped tbsp of nutritional yeast
  • 1 tsp garlic powder
  • 2 heaped tsps onion powder
  • 2 tbsp coconut oil (extra virgin)
  • 2 tbsps of agar powder
  • 1 tbsp yellow miso
  • 1 tsp sweet paprika
  • 1 tsp mustard
  • 1 tsp sea salt
1. Lightly grease a medium sized (approx.400ml) plastic container eg. tupperware box, large margarine tub etc.
2. In a small saucepan, combine the agar powder and water, mixing well. Allow the mixture to boil then reduce the heat and simmer for approx. 3 mins.
3. Remove from the heat then pour the mixture into a large blender.
4. Add the rest of the ingredients to the blender and blend at high speed till the mixture is completely smooth.
5. Pour the mixture into your container, allow to cool then cover and place in the fridge overnight.

This vegan' cheese' doesn't have the same melting qualities as real dairy cheese but it has a lovely cheesey flavour and tastes fab in grilled cheese sandwiches :) It's firm enough to slice (similar to a firm cheescake) and you can even heat the cheese with a little soya milk to make an instant cheese sauce...great for a vegan mac 'n cheese :)

Method
