Vegetarian Bliss

This is a pizza I made once without any instructions, I just threw whatever I wanted in and on it and it was sheer heaven with a ice cold drink and the telly. If you don\'t like any of the vegetables I stated, make up your own wild pizza like I did, you might surprise yourself!

Ingredients
For the pizza dough
8oz plain flour plus extra for dusting
1 tsp salt
6 tsp lukewarm water
2 tsp olive oil plus extra for oiling
1 tsp of dried yeast

For the sauce
tin of cherry tomatoes
tin of chopped plum tomatoes
1 tsp oregano
2 tsp olive oil
1 clove of garlic
salt and pepper
cornflour

For the toppings
mozerella cheese
tomato
olives (green or black)
mushroom
sweetcorn
spinach
aubergine

Method
To make the dough

add the flour and salt into a large warm bowl, make a well in the centre, add the water, oil and yeast. Using a wooden spoon (or your hands if you like getting down and dirty) and gradually mix in drawing from the sides to form a firm dough. Turn the dough out on to a lightly floured surface and knead until it is smooth and elastic. Put the dough into a lightly oiled bowl and cover with plastic cover (clingfilm) or a damp dish towel and leave for 1-2 hours.

To make the Sauce

Lightly oil a frying pan and empty both tins of tomatoes into it and cook for 5 minutes, add the salt and pepper, and oregano. Chop 1 clove of garlic and add to the pan and cook for a further 5 minutes. Add the cornflour to thicken, allow to cool slightly and then put into a food processor. Sieve into a jug to remove large parts and pips.

To make the pizza

Roll out the dough to about 1cm thick and then spread the tomato sauce on leaving a 1cm crust-line, then top with the mozerella and vegetables and cook in a pre-heated oven at 180C for 30 minutes or until golden.
