This soup was created by my mother, although she adds bacon and chicken, but being vegetarian I don\'t add any meat. This soup is excellent to eat when you are cold, it warms you up. It is also a soup that is traditionally made at Christmas in my family.
Ingredients
1 cup of Broth Mix
1 cup of red lentils
2 large potatoes sliced finely (I use a food processor but a grater is fine)
3 carrots sliced finely or grated
1 whole leek washed and chopped
1 1/2 pints of Vegetable Stock (warm)
Thyme
Rosemary
Salt and Pepper
Method
Soak the Broth Mix for at least 8 hours; I soak mine overnight, and rinse with cold water before use.
Give the red lentils a rinse before adding to the soup.
Pour the vegetable stock into a large pan and heat for 5 minutes - do not allow to boil! After 5 minutes add both the broth mix and red lentils and cook at a medium heat for 10 minutes - simmering is ok but NOT boiling; scum forms on top of the stock that has to be skimmed off.
After those 10 minutes add all the vegetables and mix in and cook on a medium heat for 15 minutes. After 15 minutes add the herbs, salt and pepper and stir. Continue cooking for a further 10 minutes.
Occassional stirring is required.
