  • 3 large handfuls mixed wild mushrooms, like chanterells and funnel chanterells
  • 2 parsnips, chopped in small dices
  • 2 red onions, chopped
  • 100 g sugar peas
  • 400 g potatoes, peeled and chopped in small dices
  • salt and pepper
  • butter
  • rocket
  • 4 eggs
  • crispbread
1. Fry the raw potato and the parsnip in butter in a large frying pan, until soft.

2. Fry the mushrooms, onions and sugar peas in butter in another pan.

3. Mix the veggies together and season. (If you wish to have meat in your pyttipanna, all you have to is to fry chopped beef, bacon and/or sausage and add this to the veggies.)

4. Just before serving, mix the pyttipanna together with some rocket.

5. Pyttipanna is mostly served together with a fried egg. If you wish to, you can instead serve a raw eggyolk on top of the pyttipanna. It is also common to serve crispbread to pyttipanna.

This is a very easy Swedish recipe. Pyttipanna is usually made by what you can find in the fridge. Traditionally, it is made by fried diced meat (beef, bacon, sausage) and diced veggies like onions and potatoes. Well, it can be made by almost anything - sometimes I even add some fried apple to it. Here's a vegetarian version of pyttipanna. Serves 4.

Method
