Mixed veggies combined to form patties. A novel way to get kids to eat veggies.
Ingredients
Carrots, swede, pumpkin, potato, cubed.
sliced leek, peas and corn.
Butter for saute.
Salt and pepper.
Grated cheese.
Chopped parsley.
Chopped garlic.
Method
Carrots, swede, pumpkin and potato, cubed and cooked in salted boiling water until tender, drained and mashed.
In a pan with a little butter and olive oil, saute some garlic and finely chopped leeks, when leeks are wilted toss in some peas and corn, and stir.
When cooled , combine all ingredients and add some grated cheese and chopped parsley, salt and fresh black pepper.
Form into patties and place on a tray lined with clingfilm and refrigerate.
Shallow fry in a little butter and OO until golden brown and heated through.
