One of our favorite healthy whole grain recipes with lots of flavor. Plated individual servings on a bed of purple lettuce make an eye appealing appetizer.
1/2 cup dried faro
1/2 cup dried kamut
1/2 cup dried wheat berries
1/4 cup grapeseed oil vegenaise
2 T apple cider vinegar
2 T dijon mustard
1/2 cup slivered almonds
Cook each grain separately until medium tender according to package directions.
Whisk together vegenaise, vinegar and mustard until smooth.
Add sauce to the cooked grains and mix.
Before serving, sprinkle toasted slivered almonds. May be served warm or room temperature.
