Peel the asparagus (if you use green asparagus, you don´t need to) and cut into 1 inch pieces. Cut the carrots into thin slices.
Put a pan on your stove and set temperature to a medium heat. Add a bit of olive oil and the veggies and let fry for about 20 min. Don´t forget to stir.
Heat another pan and griddle the soaked toast slices on both sides.
Put on plates.
Carefully add tomatoes, basil and a bit of the vinegar to the asparagus and carrots and put on top of the toast slices.
