White asparagus and sundried tomatoes on toast

This is quick recipe for a starter or a small dinner. Have a go, itīs lush! :)

Ingredients
4 slices of wholemeal toast
50 ml full fat milk
2 eggs
4 tbsp Parmigiano cheese, finely grated
1 tsp dried oregano
400g white asparagus
2 little carrots
50 g sundried tomatoes, diced
olive oil
a splash of white wine vinegar
a large hand full of fresh basil
salt & pepper

Method
Mix eggs, milk, and cheese and season with s&p and dried oregano to your taste. Put the toast slices in a bowl and let them soak in the mixture for about 30 min.
Peel the asparagus (if you use green asparagus, you donīt need to) and cut into 1 inch pieces. Cut the carrots into thin slices.
Put a pan on your stove and set temperature to a medium heat. Add a bit of olive oil and the veggies and let fry for about 20 min. Donīt forget to stir.
Heat another pan and griddle the soaked toast slices on both sides.
Put on plates.
Carefully add tomatoes, basil and a bit of the vinegar to the asparagus and carrots and put on top of the toast slices.
