I just could not resist the temptation to let Stella "mess around" a bit and I also discovered that she is a very good helper !We put the flour in the center of the work area then we have added water, salt and half a tablespoon of oil.We mixed everything and then we wrapped the dough in plastic wrap and we put it to rest in the refrigerator.
Meanwhile, I prepared the sauce
I started doing a little vegetable stock (onion, celery and carrot) then I stir fried the carrot, celery and finely chopped rosemary in a pan with some olive oil.
I added the meat cut with a knife and I made everything fry over high heat, then I sprinkled with the wine.
At this point I continued cooking adding a little stock from time to time.
When I removed the dough from the fridge, I stretched it out with the pasta machine and then I rolled the strips of dough on both sides to then cut the pasta with a knife in order to obtain the Pappardelle.
The cooking time of this pasta is fast and it is very useful to put a tablespoon of oil into the water for the pasta to prevent it from sticking.
Once the pasta is done stir fry it in a pan with the sauce and then sprinkled with freshly grated Parmesan Cheese.
