1 Chicken, whole
2 Lemons, thinly sliced
5 mandarins, thinly sliced
2 sprigs of thyme
salt & pepper
This is such a fantastic way to flavour chicken. I usually do it with the breasts, but I thought I would give it a go with a whole chicken.
Season your bird, the on the pan layer cut slices of lemon and mandarins, alternating. Place bird on top and fill cavity with remaining lemons or mandarins. Cook until meat falls off the bone.
