Whole-wheat couscous with fennel and oranges

This is a quick and easy, and very delicious healthy side or main dish.

Ingredients
1 cup whole-wheat couscous;
2 - 3 tbsp olive oil;
1 orange, segmented and roughly chopped, juice reserved;
2 tbsp chopped capers, chopped;
2 cloves garlic, sliced;
2 shallots, finely chopped;
1/2 fennel bulb, chopped;
handful of mixed yellow and red cherry tomatoes, halved;
salt and pepper;
1 1/2 cups boiling water

Method
Place the couscous in a medium bowl and pour 1 1/2 cups of boiling water over it. Stir, cover, and let it stand 10 minutes.

In a pan, warm 1 tbsp olive oil and fry the onions, garlic, and fennel until soft. Add the capers and cherry tomatoes and warm through.

Stir the vegetables into the couscous, and add the orange segments and reserved orange juice. Pour over 1 - 2 tbsp olive oil, season with salt and pepper, and stir well. Allow to rest for 5 or 10 minutes.

Top with Greek yogurt and serve.
