Winter Fruit Cruble

It is freezing here today.. so I came up with this crumble. The blackberries were in my freezer, the last few I had left from last Summer.

Ingredients
2 pears
1 apple
blackberries - handful
orange zest - 8-10 strands
2 tbls apple juice
1 tbls sugar

Topping

3 handfuls rolled oats
1 handful dessicated coconut
1 handful sultanas ( or raisins)
1 handful chopped almonds (or flakes, slivers etc)
1 handful brown sugar
1 handful caster sugar
1 handful flour
1 pinch cinnamon
2 tbls butter



Method
Peel & dice the apple & pear, casually throw the berries over, grate over a small amount of zest.
Sprinkle over 2 tbls apple juice, and a little sugar.

Mix all the crumble topping ingredients in a bowl, add the butter & rub in with your fingertips... you want a slightly wet sand type texture.

Bake at 180 degrees C for 35-40 minutes.

Serve with vanilla icecream.

The orange zest made all the difference...
