YaDa’s Bruschetta with Mediterranean Salsa

This is a wonderful light summer lunch for one or and amazing starter for four

Ingredients
YaDa’s Bruschetta with Mediterranean Salsa


Ingredients

Crusty Italian Bread
Olive Oil
1 clove garlic

3-4 Organic Roma Tomatoes
1/2 onion, cut in half
2 cloves garlic
1 jalapeño chili pepper, sliced (remove ribs and seeds if you want it less spicy)
Juice of one lime
2 TB Fresh Parsley
2 TB Fresh Oregano
2 TB Fresh Basil
1 TB Fresh Mint
½ tsp salt
1 tsp cumin
¼ tsp black pepper

Method
Cut bread into ½ inch slices, place on sheet pan, drizzle with olive oil and place in a pre heated 375°F/ 190°C/Gas Mark 5 for 10-12 minutes until just browned. Remove toast from oven and scrape the garlic over the bread.

While the bread is in the oven begin the salsa. Place fresh herbs in food processor,then add the chili pepper, garlic, onion and lime juice with the tomatoes and spices last. Pulse until mixture is chunky but not a puree.

Let sit for an hour for the flavours to combine.
