Yogurt (home made)

Easy way to make your own yogurt

Ingredients
to make 1 kgr yogurt you will need

1 kgr milk (from cow or from sheep-goat)
1 yogurt from the market(use it as culture)
1/10 tea sp salt(optional)

Method
Yogurt is the product that derives, when milk is fermented from \"fungis\"(culture).
To make yogurt in your home act as below(actually im following my grandmother\'s way)....
Put the milk in a casserole, and set it on the fire. The fire must be very slow(be VERY careful).Try to keep this temperature low, till the milk starts to \"bulge\". When this happened ,set the casserole aside, and let the milk drop its temperature. An easy, safe, and practical way to decide when is the right moment ( temperature) to add the culture , is to put your little finger inside the casserole. If you can stand the hot , counting from 1 to 10, then you have reached the appropriate temperature to add the culture. Add the yogurt you have buy from the market (culture),the salt(optional) and mix very well. Once you have stopped mixing, set the casserole aside, and cover it with a wool blanket. Yogurt is created in a higher than our environment\'s temperature ,so the blanket is warming the casserole and give it ,the appropriate time to \"fungis\" (culture) to dense the milk and turn it to yogurt.

If you don't trust your finger, and want to use a thermometer, the correct temp is MAX 45 deg C and min 37 deg C.
if you think your yog is too runny, add powdered milk next time.
have fun!
