2. Using a wooden spoon combine both, gradually adding your lemon zest and chia seeds and mix to a smooth consistency.
3. Heat a little butter in a hot pan, cooking your batter 1/2 a ladle at a time until you have gorgeous hotcakes stacked high onto 2 plates.
4. Combine your walnuts, butter and cinnamon in a small saucepan sautéing for a minute or so.
5. Sprinkle on top of the stacks, finish with a shake of icing sugar and a drizzle of maple syrup.
