  • 3/4 cup self raising flour
  • 1/4 cup almond meal
  • 1/4 cup protein powder
  • 1 egg
  • 3/4 cup soy milk
  • 1/3 cup butter
  • 1 tbsp grated lemon rind
  • 2 tbsp black chia seeds
  • 1 tbsp butter (to cook with)
  • (cinnamon walnuts)
  • 1/4 cup walnuts
  • 1 tsp butter
  • 1 tsp cinnamon
  • maple syrup
  • icing sugar (to finish)
1. Combine dry ingredients in a large bowl, and wet ingredients in a small one.
2. Using a wooden spoon combine both, gradually adding your lemon zest and chia seeds and mix to a smooth consistency.
3. Heat a little butter in a hot pan, cooking your batter 1/2 a ladle at a time until you have gorgeous hotcakes stacked high onto 2 plates.
4. Combine your walnuts, butter and cinnamon in a small saucepan sautéing for a minute or so.
5. Sprinkle on top of the stacks, finish with a shake of icing sugar and a drizzle of maple syrup.
Serves 2
