Zucchini Bread

Ingredients
1 egg
1/4 cup plus 2 tablespoons oil
1 cup zucchini, grated
3/4 cup brown sugar
1 1/2 teaspoons vanilla
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon

As with the soup, this is the first bread of any kind I've ever made. It's incredibly simple to make (takes me about 10 minutes to put all the ingredients together), and is a yummy treat to have around the house.

All you need to do is combine the egg, oil, zucchini, brown sugar, and vanilla in a bowl. Then add the dry ingredients and mix. Pour into greased loaf pan(s) and bake at 350°F for 45 - 50 minutes.

Yield: 2 mini loafs or 1 small loaf.

This is the second time I have baked this zucchini bread using zucchini from the garden. It came out beyond my expectations. My husband went mad for it as did I. I used extra virgin sicilian olive oil and mixed in some walnuts. Extremely healthy and delicious!!!
