  • 1 egg
  • 1/4 cup plus 2 tablespoons oil
  • 1 cup zucchini, grated
  • 3/4 cup brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon

It's incredibly simple to make (takes me about 10 minutes to put all the ingredients together), and is a yummy treat to have around the house. All you need to do is combine the egg, oil, zucchini, brown sugar, and vanilla in a bowl. Then add the dry ingredients and mix. Pour into greased loaf pan(s) and bake at 350°F for 45 - 50 minutes. Yield: 2 mini loafs or 1 small loaf.
