Zucchini Quiche

Zucchini Quiche

This is a Greek version of Zucchini Quiche, it is very tasty!

Ingredients
2 lbs zucchini, grated
1/4 cup margarine
3 tbsp grated onions
10 bacon slices, cut in pieces
2 tbsp finely chopped parsley
3 eggs, lightly beaten
1 cup heavy cream (35%)
1 cup grated kefalotiri or Romano cheese
2 tbsp breadcrumbs
salt & pepper
Phyllo sheets about 6-8
melted butter

Method
Shred zucchini with grater. Sprinkle salt and let it drain in a colander to remove as much liquid as possible.

In a pan sauté the onions with the margarine until transparent.
Add the zucchini & cook for about 8-10 minutes, brown a little.

Remove and set aside. In same pan add the bacon and cook until really crispy. Discard the fat and mix in with the zucchini mixture.
In a separate bowl beat together the eggs, cream and fol in the cheese, bread crumbs and zucchini mixture. Season with PEPPER only (as zucchini has salt)

Put the phyllo sheets in your dish brushing each one with the melted butter. Pour in mixture and cook for 40 minutes until golden brown
