Zucchini and eggplant bredded

Ingredients
1 medium size zucchini
1 medium size eggplant
1 tomato
2 eggs
100 g flour
500 g potatoes
1 tbsp butter
3 tbsp milk
1 bowl mozzarella
parmesan cheese
watercress
salt and pepper
extravirgin oliva oil

Method
Make a mashed potatoes with butter and milk. Season with little salt.
Sliced round zucchini and eggplant then add in to flour, eggs and then fried in a pan with oliva. Fried each side about 1 minutes then is ready.
Serve with mashed potatoes, a slice of tomato and mozzarella. For salad i recommand watercress.
Season with salt, pepper, parmesan cheese and little extravirgin oliva oil.
