Zucchinis stuffed with minced meat

one of my favorites!!!

Ingredients
4 serves

10-12 medium size green zucchini

300grms minced meat

50 grms white rice

1 onion peeled and chopped

1/2 cup of tea olive oil

1 1/4 tea sp salt

1/4 tea sp pepper

a handful of mixed herbs(parsley ,dill and mint)

the juice of 1 lemon

Method
Prepare the zucchinis(clean and scratch gently, the outer surface) and dig its inner \"flesh\".Dig the zucchinis from the one side , with a little tiny spoon and stop when you reach the other side. Do not penetrate them. If you do so, the stuff will spilled out, during the cooking.
In a big bowl, mix the minced meat ,the rice, the herbs and onion,the olive oil(the half portion) ,the salt and the pepper. Mix them well and keep the mixture aside for 1 hour.
With a little spoon, stuff carefully, the zucchinis, with the mixture, and lay them in a casserole. Add water, about 1 glass, the rest of the olive oil, the half of lemon juice and 1 tea sp of salt. Cook them in a low flame, for 45 minutes.
Keep in mind that zucchinis, are vegetables, that contain too much water, so there is no need to add water while cooking them. When the cooking is finished keep the casserole aside.
FOR THE SAUCE
Take the yolk of one egg (dont use the white part).
In a deep plate put the yolk, the juice of half lemon, and 1/4 tea sp salt.
Mix them well, using a spoon, till you make a dense mixture. Add while by while, some liquid from the casserole, you have cook the zucchinis, and keep mixing .The liquid must be lukewarm, otherwise the egg yolk will \"fried\", and the sauce will be destroyed. Keep adding 4-5 table spoons of liquid, and mix really well. Once you have mixed them well,the sauce is ready. Add all the sauce inside the casserole, with the zucchinis. \"Jolt\" the casserole.In this way the sauce will cover the stuffed zucchinis and its taste will be absorbed....

one of my favourite!! I thought this is Greek! and its not mentioned! but then I saw...Kali orexi! original!!
