apple compote or filling for cakes

This compote/filling can be used for many things. You can fill pancakes with it, use it to fill different cakes, make filled puff pastries or eat is as compote to waffles. Whenever I have apples left over I am cooking apple puree or this filling. It just takes some time to cut the apples in tiny cubes. You could grate the apples, too, that depends on how you want the filling to look like in the end. I am freezing the filling in portions, so in case we want a quick sweet treat I just have to defrost it in the microwave. Perfect when you don´t want to spend much time in the kitchen.

Ingredients
1500 g apples, pealed and cut in cubes (about 5 mm length)
80 g caster sugar
1 tsp cinnemon
100 g raisins
4 cl rum
half a pod of vanilla, seeds removed.

Method
Put all the ingredients including the scratched out vanilla pods in a pot and bring to boil. Reduce the heat and let it simmer, stir every now and then.

The filling is finished when the apples just got soft.

Remove the vanilla pods and let it cool off.
