This puree is very quickly made and filled in sterilised jars will be good for a couple months! You can vary this recipy by replacing some of the apples with pears, mangos or even cherries. Wouldn´t replace more than about 200 g, though, so it´s taste is still mainly apple.
Ingredients
1 kilo apples, ready peeled and core removed
100 ml white wine
70 g sugar
1/2 pod of vanilla
3 tsp• lemon juice
Method
Pour the white wine, sugar and lemon juice in a pot, scratch out the vanilla seeds and add them to the wine, the pod, too.
Now prepare your apples and once you´ve chopped some, put them into the pot and stir so they´re covered with the liquid. This way they won´t get brown.
As soon as all the ingredients are in the pot, bring it to boil and reduce the heat, stir every now and then so nothing gets stuck to the bottom of your pot. Let it simmer until the apples are soft, remove the vanilla pods and blend the apples until they´ve got the texture you want.
Fill them in sterilised jars and turn them on the lid for 10 minutes, then turn round again to let the puree fully cool off.
Store the jars in a cool and dark place.

In case you don´t want to use wine you can use apple juice or any other fruit juice you want. You might have to vary the amount of sugar then!
