a real fresh salad for the summer
180grms boiled white beans
100 grms chopped rucola
2 tomatoes peeled and chopped in slices
4 chopped dried tomatoes
6 fillets of salty anchovies
2 boiled eggs in pieces
a handful of capers
for the sauce you will need
4 table sp olive oil
1 table sp vinegar
1 tea sp salt
1 table sp lemon juice
pepper and thyme
While you already have boiled the beans put them in a wide and deep utensil,that can be used to mix the ingredients of the salad. Add the tomatoes and mix them with the beans. Be careful ......just dry as much as you can the liquids from the tomatoes,otherwise you salad will be watery!!!
now you have already mix the 2 basic ingredients of your salad,put them in the plate you gonna serve it.The next step is to add all the other ingredients(dried tomatoes, rucola,anchovies,capers,olives and egg slices).
When you finished mix all the ingredients again ,gently with two wooden spoons.
Now its time to make and add the sauce......
Put all the ingredients of the sauce and mix them well . Add the sauce in every dish separately .......
