beans in the oven

Ingredients
Makes 6 serves
250 grms beans(giants)
2 dry onions peeled and chopped
3 matured tomatoes peeled and chopped
1 tea sp oregano
˝ tea sp black pepper
1 tea sp red sweet pepper (paprika)
1 tea sp sugar
1 cup of olive oil
2 red or green sweet peppers chopped
A handful of parsley and thyme
1 tea sp of tomato paste

Method
Soak the beans in a casserole with lukewarm water for a night.
The next day throw the water and boil (unsalted water) for 10 minutes the beans. Throw the water again, and add fresh water in the casserole.
Boil them for 45-50 minutes(the time of boiling depends on how fresh are the beans. If they are from the latest crop ,then you will need less time to boil. If not then you will need more time).
The next step is to drain them and keep the aside.
To prepare the tomato sauce ,just heat the oil in a frying pan and add the chopped onion. Sauté it for 3-4 minutes and then add the chopped tomatoes with all the rest herbs and seasonings. Add two glasses of water and let them boil in slow temperature for 10 minutes.
Place the beans in a wide baking pan. Add some salt and pepper and oregano and mix them. Add some olive oil and mix again. In the end add the sauce you have earlier prepared in the frying pan(you can also use a sauce pan ,if its more convenient to you) on top.
Mix again and in the end, use a big(wooden) spoon to (smoothly and gently and not press to much) flatten all the ingredients in the baking pan. Now you can add above the slices of dried or fresh tomatoes and some of the chopped parsley and thyme(optional…but its great).
Bake in a hot oven with medium temperature for 35 -40 minutes…..
