4 medium size beef fillets
2 tiny red peppers
1 table sp honey
2 table sps chopped celery
4 table sps olive oil
4 medium size potatoes
100 grms Feta and yellow cheese
1 table sp olive oil
1 table sp light mayonnaise
Marinate the fillets with olive oil, rosemary,thyme,garlic ,pepper, celery .Keep them in the fridge for a night.
The fillets can be cooked either on a charcoal fire or on a grill . I prefer the first choice cause it gives them an extra “smoky” taste. Before you cook them, apply the honey on their surface and cook them for 15 minutes from both sides(total time).When you finished, add salt and pepper…the portion you like.
Preparing the stuffed potatoes
Add the potatoes in boiling salted water and boil them for 20 minutes. Drain the water and keep them aside to cool. Cut a slice along every potato’s surface and “dig” their flesh.Care not to penetrate them.
In a bowl add the flesh of the potatoes, cheeses ,olive oil mayonnaise and salt and pepper.Combine them and make a thick mixture.Fill the potaoes with this mixture and bake them in the oven using hot air(high temperature), for 10 minutes.
Make a quick sauce in a sauce pan and serve the fillets,with this thick sauce of olive oil, white dry wine and 2 table sps flour.
