  • mainly beet
  • plus all herbs you like from your veg garden: celery,sage, rosemary, onion, garlic, onion fresh leaves, leek
  • 8 eggs
  • salt
  • a squeeze of lemon
  • a pich of nutmeg
beat now the 8 whole eggs with salt, nutmeg and a squeeze of lemon juice. Heat your iron skillet, clean if necessary with a kitchen paper, pour a glug of olive oil and when hot toss on it the eggs and vegs you have mixed together with a fork. Let cook on medium fire turning your frittata with the help of a lid until it's well colored on both sides

beets are such an humble veg that sometimes need to be highlighted with a dish like this

boil the beets, let the other vegs go very slowly with some good ev olive oil after cutting them finely, drain the beet and add to the stirfrying vegs, half work is done
