blushing potatoes

Ingredients
3 midium potatoes[half boiled]
1 onion
3 cloves garlic
juice of half a lemon
2 tsp cumin
5 tbsp tomato paste
salt and pepper
2 bay leaves
rosemary
basil
splash of sherry vinegar
vegetable oil

Method
half boil the potatoes , peel and set aside. mince the onions and garlic .heat the saucepan a bit, add a bit of veg oil,the bay leaves, rosemary and the minced onions and garlic . let them cook until tender.
add the tomato paste , cumin ,S&P , lemon juice, and the vinegar and mix well.
cut the potatoes in chunky sizes[fat french fries or wedges]
put them in a tray , poor over the onion mixture , mix gently , and let cook for 6-7 minutes in a midium heat oven .
transform into a plate and decorate with minced basil leaves
