castle Cookies (Portuguese tradition)

Ingredients
400g de sweet potato (mashed)
700g sugar
200g blanched sliced almonds (finely ground)
50g dried shredded coconut
200g cornflour
75g de wheat flour (not self-raising)
3 eggs
1 orange (grated orange peel)
a little bit of salt

1egg yolk (to decorate)

Method
peel the potatoes and bring them to a boil with water and salt until tender. Remove from heat, drain and mash;
In a medium saucepan mix mthe mashed sweet potatoes with sugar; when it starts to boil, add the blanched sliced almonds (finely ground), the dired coconut, the orange peel and the eggs. keep stirring and while still cooking stir in the 2 flours (mixed). Combine all these ingredients until blended and remove from heat;

cool up; you can place it all night in the freezer (eh..eh..)
Form tablespoons of dough into little balls and gently press them with a fork;
Drop onto lightly buttered cookie sheets sprinkled with flour; bake in a pre-heated oven for 15 minutes or until lightly browned;
Cool on racks and store;
