chocolate cheese cake

Ingredients
180g digestive biscuits
75g melted butter
100g milk chocolate
300g cream cheese
200ml double cream
75g sugar
150g raspberries
icing sugar
chocolate melted, to serve (optional)

Method
Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like:thumbsup:

i made the cheese cake at school my teacher was impresed it looked so good it tasted good to my mum an lil sis really enjoyed in know make it every fortnight and for ma mum b-day she was shocked but loved thanks jamie u helped me loads <br />

Does this still work with white chocolate or should i change the quantities of things e.g the sugar as it would be to sweet? It looks yum!

I made this cheesecake last week, it was gorgeous, I added 50mls of baileys which was a nice addition I also used plain chocolate instead of milk! Yummy!

does anyone know if you have to wisk the cream? because it only says to mix, and im not sure if that will give it the right texture? was also thinking about using white chocolate, has anyone tried this?

if you swap milk chocolate for dark chocolate it is better and less sickly sweet!
