Ingredients
1 or 2 pounds chicken breasts and or thighs bone in skin on
a few ounces of bacon or a few tbs of bacon fat
1 onion
1 green pepper
1 or 2 jalepeno
1 can black beans
1 can tomato diced
2 cup chicken stock
1 tsp oregano
2 tsp cumin
1 or 2 bay leaf
flour for dredging
3 or 4 cloves garlic
1 lime
salt and pepper to taste
chopped cilantro or parsley for garnish
cooked white rice for serving
Method
brown bacon in a large deep pan until crispy or use a few tbs of bacon fat. salt and pepper chicken, dredge in flour, and brown on all sides. remove from pan. add sliced onion, sliced green pepper,chopped jalapeno, and chopped garlic and soften. add cumin, bay, oregano, salt and pepper to taste. add beans, chicken stock, and tomato. bring to simmer and add the chicken back to the pan and partially cover and simmer unitl chicken is tender (about 35-45 min). squeeze lime juice in the pot and add garnish. serve over cooked white rice. enjoy:D
