esqueixada (cod salad)

- 700 gr of cod (bacalao)
- 200 gr of white onion cut in small pieces
- 300 gr of fresh tomatos cut in pieces
- 80 gr of green pepper cut in small pieces
- a few black olives cut in pieces
- 80 gr of boiled lentils
- extra virgin olive oil
- modena balsamic vinegar
first of all, sorry for my english. Itīs very hard for me to translate cooking-words into english!
in spain I always buy salted cod so I must put the cod in water for at least 24-36 hours
crumble the cod and mix with the onion, tomatos, pepper and the black olives. Add black pepper, extra virgin olive oil and move, move, move! We donīt need to add any salt because the cod was salted before
Then, put a round mold for salads on a plate and put the salad on it. Be sure to mash down the salad! then remove the round mold so it would look like the picture.
to finish: put some boiled lentils on top and decorate with modena balsamic vinegra cream.
