  • a handful of fresh cropped sclupit
  • scallion ev olive oil
  • 8 Anita's hens' eggs
  • pgrated parmesan
  • a sweeze of lemon juice
  • salt
  • a well coated skillet
I let some scallion slices go together with ev olive oil and sclupit until tender.I added it to the beaten eggs with a pinch of salt and lemon juice. My iron skillet is a wonderful tool to make frittata once its dry on one side I add the grated parmigiano and turn the frittata and let the cheese melt and then get crispy as if it was a frico, after turning it a few times the surface is covered with a savored veil of crusty parmigiano and ready to go on a plate and................... wait for guests to taste it

perfect day for frittata with sclupit today, to pepare after lunch to be ready for merenda/snack or supper or whenever one goes through the kitchen and is hungry

Method
