frico is the simplest latteria cheese melted and stirred in a nonsticcky little pan until golden, it should be used as a container and eventually (surely) eaten together with the stuffing or at the end
a mix of a good choice of mushrooms
some stripes of guanciale or pancetta
virgin good olive oil
fresh parsley leaves
sautée the sliced mushrooms together with oil and garlic until done, take garlic away.
fry the pancetta or guanciale until crsipy
melt a very thin layer of grated or cut into little pieces of latteria cheese until golden in a non sticky pan, turn upside down when it\'s warm on the bottom of a reversed glass and let it cool and become hard.
fill every basket with mushrooms and a stripe or two of pancetta
color with a dust of fresh parsley
fingers crossed it comes out like you want to and people enjoy it
