sautée the sliced mushrooms together with oil and garlic until done, take garlic away.
fry the pancetta or guanciale until crsipy
melt a very thin layer of grated or cut into little pieces of latteria cheese until golden in a non sticky pan, turn upside down when it's warm on the bottom of a reversed glass and let it cool and become hard.
fill every basket with mushrooms and a stripe or two of pancetta
color with a dust of fresh parsley
