ginger cookies

Ingredients
2½ cups all-purpose flour
1 cup sugar
2 eggs at room temperature
½ cup unsalted butter at room temperature (100g), softened
½ teaspoon ground ginger
2 tbsp corn syrup
½ tsp baking soda
3 tsp fresh ginger, grated

Method
In a large bowl, combine flour, baking soda and ground ginger. In the electric mixer bowl, beat sugar and butter until smooth. Add eggs and corn syrup. At last, add the flour mixture and fresh ginger. Take it to fridge for about 1 hour.
Preheat oven to 350ºF and grease a large baking tray. In a soup plate, combine some sugar and ground cinnamon. Roll each spoon of batter in the cinnamon mixture and shape the cookies. Bake for 10-15 minutes.
