gnocchi di zucca

how to convert an autumn supper in a lively coloful serata

Ingredients
a few slices of zucca violina diced
00 flour
salt and nutmeg
butter and sage
smoked grated ricotta
a rainy evening

Method
put same amount (not weigh!) mashed damp cooked squash and 00 flour - 2 or 3 eggs (they make the stuff stay together and not go around in boiling water) salt, nutmeg in a bowl, mix just to dissolve all ingredients. do not mix too long please.
then let drop into salted boiling water with a tea spoon and your finger or with another spoon, little amounts of sunny yellow stuff you have obtained. When the gnocchi come up and float they are ready to be put in a tray with melted hot butter and sage leaves and some smoked grated ricotta on top

Yesterday I had crown prince gnocchi with ricotta at Fifteen and it was simply amazing, Jamie if you read this (I know, he never will!) then please publish the recipe! I'm going to attempt it using the recipe above as a base. I'lll let you know how I get on!
