Ingredients
500gr dry fava beans
1 onion
1 tbl spoon olive oil
salt, pepper
garnish:
1 fine choped dried onion
caper OR nutmeg fresh grated (never both of them in the same recipe)
olive oil
fresh parsley
Method
Wash the fava in a strainer under running water until the water is clear.
In a wide pot with boiling water put the fava with the onion cut in half, 1 tbl spoon of olive oil, salt and pepper. The water should be 2 fingers over the fava. When it starts to boil turn the heat to medium-low and remove the foam using a spoon.
Leave it in low heat for about 30 min. until it absorbs all the water, WITHOUT STIRRING OR MOVING THE POT!! Otherwise the fava sticks on the bottom of the pot. (don\\\'t use blender to mix. it\\\'s the easy but not the correct way.).
Taste in order to see that the beans are cooked and then rinse using a fork as much as you can so that it becomes creamy and smooth. The fava is ready!
If you use the nutmeg option now is the time to put it in and stir well. Serve in a plate with some choped dried onion, fresh parsley and olive oil.
Instead, you can serve without using the nutmeg and except the onion, parsley and oil, add also the caper.
The best sidedish is smoked fish of your taste or fish from a can.
