courgette
ribe rice
evo oil little pear tomatoes
Method
I boiled 7 handfuls of ribe rice in salted water for 3 of us. Meanwhile I sliced the white end of a fresh cropped leek and let it go slowly in evo oil together with a grated pale green courgette. When the rice was done I added a handful of little pear tomatoes into tiny pieces to the previous vegs, without cooking them. An extra glug of oil just before tossing in the drained rice.
